Albondigas en Salsa de Almendras!


Meatballs in Almond Sauce

A Mexican comfort food favorite! Best served with homemade tortillas or rice.

The Sauce

1 - Heat oil and saute onion and garlic until golden brown.

2 - Add sugar, vinegar, tomato sauce, and almonds.

3 - Cook stirring occasionally for 2 minutes. Season with salt and pepper.

The Recipe

1 - Combine almond sauce, and beef broth and slowly bring to a boil.

2 - Mix beef, pork, breadcrumbs, egg, nutmeg, salt, pepper, and carrot and form into walnut sized balls.

3 - Add meatballs to boiling sauce and simmer gently for 15 minutes

4 - Garnish with parsley and serve on rice or tortillas.

  • The Almond Sauce:
  • 2 Tbs oil for frying
  • ½ chopped onion
  • 2 cloves crushed garlic
  • 1 Tbs sugar
  • 2 Tbs vinegar
  • ¼ cup tomato sauce
  • ½ cup finely chopped almonds
  • salt and pepper for seasoning
  • The Recipe:
  • 1 cup almond sauce
  • 1 cup beef broth
  • ½ lb. ground beef
  • ½ lb. ground pork
  • 4 Tbs fine dry breadcrumbs
  • 1 egg
  • ½ tsp nutmeg
  • 4 Tbs carrot
  • salt and pepper
  • parsley for garnish
