Banana Bread

Preheat oven to 350, grease loaf pan.

Beat butter and sugar together until smooth and fluffy. Add eggs one at a time, mixing each in well. Add orange rind, vanilla and almond extracts.

mix together dry ingredients, add this together alternately with banana/coffee mixture, beginning and ending with dry ingredients. Don’t over mix!

Spread batter into loaf pan. Cook 40-50 minutes, until a skewer inserted into the center comes out clean. Cool 10 minutes in pan, 1 hour out of pan before slicing.

1 Loaf servings

  • 1 1/2 sticks butter
  • 1 2/3 cups packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 tsp grated orange rind
  • 2 cups flower
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tbs baking powder
  • 1/3 tsp nutmeg
  • 1 cup pureed banana soaked in 1/2 cup strong black coffee
