A Northern italian spinach noodle lasagne with bolognese and béchamel sauce.
Prepare pasta and bolognese. To make béchamel melt butter in sauce pan and add flour, mix, then slowly add chicken stock and half and half bit by bit letting it come to the boil before adding more liquid. When finished sauce should be consistent and thick. Add a bit of nutmeg and black pepper.
To make lasagne layer the bolognese and noodles. Add the béchamel to the top layer of the lasagne and sprinkle with parmesan. Cover tightly with aluminum foil and bake at 350 for about 30 minutes. Uncover and cook until top has browned.
