Curry Base


A standard base for curries

This recipe covers the basics of a curry. Choose your own preferred meat and vegetables.

Fry onion in oil. Add garlic and ginger. Stir 1 minute. Add cubed meat and brown. Add curry powder. Add more oil if needed. Fry a bit then add liquid. Bring to boil. Add salt. Simmer 45 minutes. Add Vegetables. Simmer additional 30 minutes. Add garnish.

Ingredients
4 servings

  • 2 tablespoons oil, ghee, or shortening
  • 1 1/2 pounds meat (beef, lamb, chicken)
  • 2 onions
  • 2 cloves garlic
  • 1 inch fresh ginger chopped
  • 2 tablespoons curry powder
  • 1 1/2 cups liquid (stock, water, coconut milk, yoghurt)
  • vegetables (cubed potatoes, carrots, cauliflower, peppers, tomatoes)
  • 1 teaspoon salt
  • garnish (chopped fresh chilies, coriander, mint)
