Gingerbread

Warmly aromatic and inviting yet not too sweet, gingerbread just might have inspired the term “comfort food.”

Preheat oven to 350. Grease and flour a 9-inch square baking pan

Sift dry ingredients together in a mixing bowl. Add the egg, sugar, molasses. Mix well.

Pour boiling water and oil over mixture. Stir until smooth

Pour batter into prepared pan. Set on center rack of oven and bake until the top springs back when touched and the edges have pulled away slightly from the sides of the pan, 35-40 minutes.

  • Butter, for greasing the pan
  • 1 2/3 cups all-purpose flour, plus extra for flouring the pan
  • 1 1/4 teaspoons baking soda
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1 egg, lightly beaten
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 1/2 cup boiling water
  • 1/2 cup vegetable oil
