English style halibut preparation. This ends up tasting much nicer than it sounds. Great served with bread and swiss chard.
Place a dish in a hot oven with some butter and heat until melted. Put the fish in the dish and cook quickly on each side. Pour some milk over the fish, salt and pepper fish, and then sprinkle some grated cheddar cheese on top. Keep in the oven until just cooked through.
