Pork Chile Verde


Easy Pressure Cooker Recipe

Easy meal that produces lots of leftovers for quick weeknight meals.

Salt then sear pork in bottom of pressure cooker on all sides and in batches.

Remove pork and add onion, garlic, tomatillos, peppers, and cumin. Mix to remove and browned bits from bottom then add pork back, seal lid and cook for 42 minutes. 

Release pressure. Check for doneness, if pork is fork tender remove otherwise cook for another five minutes. Remove pork, add cilantro and fish sauce, and then use an immersion blender to blend. If you have time you may reduce sauce to increase flavor.

Ingredients

  • 4 lbs boneless pork shoulder cut into 2 inch chunks
  • 3/4 lbs tomatillos, quartered
  • 2/3 lb poblano peppers, seeded and roughly chopped
  • 6 ounces Anaheim or Cubanelle peppers, seeded and roughly chopped
  • 2 Serrano or jalapeño chiles, seeded and roughly chopped
  • 8 ounces or 1 medium onion, roughly chopped
  • 6 cloves garlic, peeled
  • 1 tablespoon cumin seed, toasted and ground
  • 1/2 cup loosely packed fresh cilantro leaves and stems
  • 1 tablespoon fish sauce
  • Fresh corn tortillas, lime wedges, avocado, pickled red onions to serve
