Roasted Fish with Tomatoes & Olives

Roasted Fish with Tomatoes & Olives

Preheat oven to 375

Toss tomatoes with olive oil and garlic, roast for 25 minutes

Remove tomatoes from oven and nestle fish into tomatoes and their juice

Scatter olives and return to oven for 25 minutes

Sprinkle with fresh herbs, olive oil, & salt and pepper

Ingredients
4 servings

  • 1 lb grape or cherry tomatoes
  • 3 cloves garlic, chopped
  • 4 tbls olive oil
  • 1.5 to 2 lbs halibut, cod, or any firm white fish
  • 1/3 cup pitted kalamata olives
  • 1 handful chopped fresh herbs such as oregano, basil, & thyme
