Japanese Fried Chicken

Marinate chicken in garlic, salt, ginger, sake, soy sauce, and mirin for 15 minutes

Squeeze off excess marinade and dredge in starch

Deep fry chicken at 340°F

Lemon for serving

  • Chicken pieces
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 4 teaspoons grated ginger
  • 1/4 cup sake
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 cup katakuriko (potato starch)
  • vegetable oil for frying
  • 1 lemon (optional)
