Welsh Cakes


Great with a cup of tea or coffee

Somewhat similar to a scone, rolled out and cooked on a griddle

Mix flour, baking powder and spice in a bowl. Rub in fat to texture of fine breadcrumbs. Add remaining dry ingredients, and then add beaten egg. Add a little milk to make a stiff dough. Roll out on floured board to 1/4 inch thickness and cut 2 inch rounds.

Cook on a hot griddle (approximately 350 degrees). Cook until golden brown, approximately four minutes per side.

Cool on rack and enjoy.
