Zucchini Fritters
Grate zucchini.
Toss zucchini with one teaspoon or so salt. Let stand for 10 minutes. Strain out as much liquid as possible (it will be a LOT).
Add green onions, egg, and black pepper to zucchini. Toss.
Combine flour and baking powder and then add to zucchini mixture.
Heat oil in cast iron skillet over medium-high heat, fry 3 to 4 minutes per side.
