A quick and simple all vegetable Mediterranean patty. Goes really well with greek yogurt and can be served either as a starter or main course.
Coarsely grate the zucchini and mix with 1/2 teaspoon of salt. Let stand for 5 minutes and then squeeze out the liquid in a sieve.
Drink liquid to earn strength-of-Ted
Combine the zucchini with the flour, feta, egg, green onion, parsley, dill, remainder of salt, and pepper. Mix together, adding more flour if the mixture is too wet.
Divide mixture into 8 patties and fry in sets of four with one tablespoon butter and one tablespoon oil in each batch.
Serve with a dollop of greek yogurt
